GF DF Choc Chip Cakes

I have spent most of my wellness journey finding savory morning cakes that are gluten free & dairy free. These are divine! They are easy to make, can be made thick or thinner. Perfect savory treat for any morning. I am SO excited to share this recipe I have been making for the last couple of months!
GF & DF PANCAKES
This is my go-to pancake recipe. I have been making these over the last couple of months. Easily add a scoop of collagen or protein powder to add more protein.
Top with bananas, blueberries, or more chocolate chips!
2 cups gluten free flour (I like this brand best)
1 teaspoon gluten free baking powder (this brand is gf)
1 teaspoon cinnamon
2 teaspoon ground flax meal
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract
1 egg
1 - 1/2 cup oat milk or dairy free milk of choice
1/2 cup blueberries (optional)
1/4 cup chocolate chips (I use Enjoy Life brand)
INSTRUCTIONS
Combine dry ingredients first until well blended. Add wet ingredients including the chocolate chips. Mix until everything is covered evenly.
This recipe will typically make 5-8 pancakes depending on size. I use avocado oil in the skillet before dropping the batter.
Notes
The baking powder is extremely important in this recipe. I have tried replacing with baking soda and it does not come out well. I always add in ‘milk’ slowly. You may need additional dairy free milk.
This can be made vegan easily with 1 flax egg substitute. Combine 1 tablespoon flax meal + 2 tablespoon water and let sit for 5 minutes before adding to pancake mixture.
Top with maple syrup and enjoy!
